Civil servants (titulaires) first. Contract staff can also be hired, because an entry grade in category C allows direct hiring without a competitive exam.

The profile they look for:
- Knowledge of food products and mass catering.
- Knowledge of HACCP rules and how to apply them.
- Skill in mass catering cooking techniques.
- Knowledge of nutrition and dietetics.
- Rigour, organisation, and teamwork.
- Ability to handle unexpected situations.
2 Résumé and cover letter
A one- or two-page résumé and a short cover letter that takes up the duties of the offer with your examples. If you are a civil servant, you are often asked for your latest status decision (arrêté) and your latest annual review reports.
3 Apply

4 Interview and answer
If your application is shortlisted, the employer contacts you for an interview, often with two or three people. Prepare: why this job, your experience close to the duties, and your questions.
